Breakfast is certainly the most important meal. The way your morning starts can make or break the rest of your meals that day.There are plenty of times I have eaten poorly in the morning and when lunch came around I thought, “ehh, whatever. I already had crap for breakfast”. And the rest of the day is downhill from there.
Tell me if this sounds like you too…The last thing I want to do when I wake up is cook breakfast. I usually set 3 alarm clocks and stay in bed until the last possible second. Anything to save time is crucial. Before you know it I’m sitting in traffic (breakfast-less!) on the way to work and can’t eat until noon.
There is one solution.
Paleo breakfast meal prep.
Meal prepping is what makes a paleo lifestyle manageable. Let’s face it, you don’t have time to cook every single meal. This particular recipe is perfect to eat on the go. That ride to work? Grab a wedge of this casserole and eat it while you sit in traffic. ;) Beware of distracted driving laws. This is that yummy!
INGREDIENTS
- 2 medium spaghetti squash
- 2 10 oz packs chopped broccoli, frozen
- 1 garlic clove, chopped
- 1 medium yellow onion, chopped
- 7 eggs, whisked
- 1 tbsp coconut flour (optional)
- 2 tsp fresh parsley, basil, or fresh herbs of your choice
- 1 tsp salt and pepper to taste
- Bake the spaghetti squash. (Cut squash in half, scoop out seeds, bake in oven with 1/2 cup water in the pan for 30 minutes.) Once cool, scrape out spaghetti squash flesh with a fork, squeeze out the moisture, and set aside.
- Defrost your chopped broccoli. Squeeze out the extra moisture and set aside. Extra moisture will cause your casserole to get watery and crumbly.
- Scramble the eggs with the parsley, basil, herbs of your choice, and salt & pepper. Combine the squash, eggs, defrosted broccoli, garlic and onion to a bowl. Mix in optional coconut flour if it looks very wet.
- Pour mixture in a well-greased casserole pan at 375 degrees for 40 minutes until browning occurs.
Now you’re ready to eat a fast breakfast for the whole week!
Personal notes: The frozen broccoli may be substituted with 2 cups of pre-cooked chopped broccoli.
I made this as a side dish for Christmas dinner and it complimented all the different flavors on the table very well. I highly recommend as a pot-luck type of dish. Non-paleo eaters don’t recognize that it is “healthier” than other dishes. Sneak attack paleo. haha ;)
